Ingredients
  

For the crust
  • 1 ¾ cups all-purpose flour Sifted, for crust
  • ½ cup powdered sugar For crust
  • ½ cup unsalted butter, softened For crust
For the filling
  • 1 cup rhubarb, chopped Fresh or thawed from frozen
  • 8 oz cream cheese, softened At room temperature
  • 1 cup granulated sugar For filling
  • 2 large eggs At room temperature
  • 1 tsp vanilla extract For flavoring
  • ½ tsp baking powder For leavening
  • pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 ¾ cups of all-purpose flour, ½ cup powdered sugar, and softened butter. Mix until crumbly.
  3. Press the mixture into the bottom of a greased 9x13 inch baking dish.
  4. Place the crust in the oven and bake for about 15 minutes, or until it’s lightly golden. Remove from the oven and let it cool slightly.
Making the filling
  1. In a separate bowl, beat together the softened cream cheese and 1 cup of granulated sugar until smooth.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract, baking powder, and a pinch of salt.
  4. Gently fold in the chopped rhubarb into the cream cheese mixture, ensuring they are evenly distributed.
Baking
  1. Pour the creamy filling over the pre-baked crust, spreading it evenly.
  2. Return the dish to the oven and bake for an additional 25-30 minutes, or until the filling is set and just beginning to brown.
Cooling and Serving
  1. Allow the bars to cool completely in the baking dish before slicing into squares.
  2. For a refreshing touch, serve chilled!

Notes

Use fresh rhubarb for the best flavor. You can also experiment with toppings like fresh strawberries or whipped cream.
