Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine 1 ¾ cups of all-purpose flour, ½ cup powdered sugar, and softened butter. Mix until crumbly.
- Press the mixture into the bottom of a greased 9x13 inch baking dish.
- Place the crust in the oven and bake for about 15 minutes, or until it’s lightly golden. Remove from the oven and let it cool slightly.
Making the filling
- In a separate bowl, beat together the softened cream cheese and 1 cup of granulated sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, baking powder, and a pinch of salt.
- Gently fold in the chopped rhubarb into the cream cheese mixture, ensuring they are evenly distributed.
Baking
- Pour the creamy filling over the pre-baked crust, spreading it evenly.
- Return the dish to the oven and bake for an additional 25-30 minutes, or until the filling is set and just beginning to brown.
Cooling and Serving
- Allow the bars to cool completely in the baking dish before slicing into squares.
- For a refreshing touch, serve chilled!
