  • 1 cup Pasta of your choice (spaghetti, fettuccine, or penne work well) Cook according to package instructions.

Sauce Ingredients
  • 1 cup Pumpkin puree
  • 1 cup Heavy cream
  • 2 cloves Garlic, minced
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Cinnamon
  • to taste Salt and pepper For seasoning.

Method
 

Cooking the Pasta
  1. In a large pot, boil water and cook your choice of pasta according to package instructions. Salt the water generously.
Preparing the Sauce
  1. While your pasta is cooking, heat a medium saucepan on medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Stir in the pumpkin puree and mix it with the garlic for another minute.
  3. Gradually add the heavy cream, stirring continuously until combined.
  4. Sprinkle in the nutmeg, cinnamon, salt, and pepper. Stir everything together and let it simmer for about 5-7 minutes.
Combining and Serving
  1. Once your pasta is cooked, drain it and toss it in the pumpkin sauce until evenly coated.
  2. Plate the pasta and garnish with freshly grated Parmesan cheese and parsley. Enjoy!

Notes

For a lighter sauce, consider using half-and-half or a milk alternative. Avoid overcooking the garlic to prevent bitterness. If the sauce is too thick, add reserved pasta cooking water to adjust consistency. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
