- Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large pan, heat 2 tablespoons of olive oil over medium heat. Add diced chicken breast, season with salt and pepper, and cook until golden brown, about 5-7 minutes.
- Once the chicken is cooked, add the minced garlic and chopped sun-dried tomatoes. Sauté for an additional 2-3 minutes until fragrant.
- Toss in the fresh spinach, stirring until it wilts, which should take around 2 minutes.
- Reduce the heat and pour in the cream. Stir well to combine all the ingredients. Add the cooked pasta and mix until everything is evenly coated in the sauce.
- Remove from heat and sprinkle grated Parmesan cheese into the pan. Stir to incorporate, adding extra cheese on top before serving if desired.

Notes
You can swap in vegetables like mushrooms or bell peppers for a variation. Timing is key for not overcooking the spinach. If the sauce is too thick, add a splash of pasta water.
