Preparation
- Start by preheating your oven to 375°F (190°C).
- Rinse and pat the chicken thighs dry using a paper towel.
- In a small bowl, mix together onion powder, paprika, salt, and pepper. Rub this mixture evenly on both sides of each chicken thigh.
Cooking
- In a large oven-safe skillet, heat a little bit of oil over medium-high heat. Once hot, add the chicken skin-side down and sear for 5-7 minutes until the skin is golden brown.
- Flip the chicken over and cook for an additional 3-5 minutes.
- Reduce the heat to medium and add minced garlic, sautéing it for about 1 minute.
- Next, pour in the chicken broth followed by the heavy cream. Stir everything together and let it simmer for about 2 minutes.
- Transfer the entire skillet to the preheated oven. Bake for about 25-30 minutes or until the chicken is fully cooked (internal temperature should reach 165°F or 75°C).
- Remove the skillet from the oven and let it cool slightly. Garnish with freshly chopped parsley before serving.
Notes
Check on the chicken during baking to prevent overcooking and ensure it remains juicy. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
