Preparation
  1. Season the chicken thighs generously with salt and pepper.
Cooking Chicken
  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs, cooking for about 6-7 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
Sautéing Mushrooms and Garlic
  1. In the same skillet, add the sliced mushrooms and sauté until they are soft and golden, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Creating the Sauce
  1. Pour in the chicken broth and heavy cream, stirring to combine. Let the sauce simmer for a few minutes to thicken, stirring occasionally.
Combining and Garnishing
  1. Return the chicken thighs to the skillet, nestling them in the creamy sauce. Allow to simmer for an additional 5 minutes. Garnish with fresh parsley before serving.
