Preparation
  1. In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Cook for about 5-7 minutes or until the vegetables are softened and the onion is translucent.
  2. Add the chicken pieces into the vegetable mix. Stir well to combine and cook for another 5-7 minutes, ensuring the chicken is browned on all sides.
  3. Pour in the chicken broth, add thyme and basil, and season with salt and pepper. Bring the mixture to a boil, then lower the heat and let it simmer for about 10 minutes.
  4. Stir in the heavy cream, allowing the soup to thicken slightly. Let it simmer for an additional 5 minutes, stirring occasionally.
