  • 8 ounces pasta (fettuccine or penne) Cook according to package instructions
  • 1 cup heavy cream Can substitute with half-and-half or coconut cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for serving Parmesan cheese Freshly grated
  • for garnish Fresh basil

Method

Cooking Pasta
  1. Start by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Preparing Chicken
  1. While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning.
  2. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
Making Sauce
  1. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about a minute until fragrant.
  2. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.
Combining Ingredients
  1. Return the chicken to the skillet, letting it simmer in the sauce for about 3-5 minutes. Taste and adjust seasoning if necessary.
  2. Add the drained pasta to the skillet, tossing it in the sauce until fully coated.
Serving
  1. Plate the pasta and chicken, then sprinkle with freshly grated Parmesan cheese and garnish with fresh basil.

Notes

For a lighter version, consider substituting heavy cream with half-and-half, or use coconut cream for a dairy-free option. Always taste your sauce before serving; a pinch of salt or extra seasoning can elevate the dish.
