  • 1 cup sago pearls If unavailable, substitute with small tapioca pearls.
  • 2 cups coconut milk Or use almond milk for a non-coconut flavor.
  • 2 ripe mangoes, pureed The star fruit of this dessert.
  • 1/4 cup sugar Adjust sweetness to your preference.

Method
 

Cooking the Sago Pearls
  1. In a pot, bring water to a boil. Add the sago pearls and cook until they become translucent, approximately 15 minutes, stirring occasionally to prevent sticking. Once cooked, drain and rinse under cold water to stop the cooking process.
Preparing the Coconut Milk Mixture
  1. In a separate saucepan, heat the coconut milk over low heat. Add the sugar and stir until dissolved. Taste and adjust the sweetness as desired.
Mixing Everything Together
  1. Once the sago is cool, add it to the coconut milk mixture. Stir well and allow it to absorb the flavors for about 5 minutes.
Adding Mango Puree
  1. Mix in the mango puree, stirring until everything is well combined.
Chilling and Serving
  1. Transfer your Creamy Mango Sago into serving bowls. Top with fresh mango chunks and refrigerate for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Avoid freezing as the texture may change.
