- Start by peeling and dicing your ripe mangoes. Look for mangoes that are slightly soft to the touch, indicating ripeness.
- In a blender or food processor, add the diced mangoes, lime juice, and vanilla extract. Blend until you achieve a smooth purée.
- In a large bowl, whip the heavy cream with a hand mixer or stand mixer until it forms soft peaks. Be careful not to over-whip.
- Gently fold the mango purée into the whipped cream. Then, add sweetened condensed milk and a pinch of salt to balance the sweetness. Fold until all ingredients are nicely incorporated.
- Spoon the mixture into serving dishes or cups and refrigerate for at least 2 hours to allow the mousse to set properly.
- Top with your favorite toppings, such as additional mango slices, whipped cream, or coconut flakes, before serving.
Notes
Store in the refrigerator for 3-4 days in an airtight container. Avoid adding toppings until ready to serve to keep it fresh.
