  1. Start by peeling and dicing your ripe mangoes. Look for mangoes that are slightly soft to the touch, indicating ripeness.
  2. In a blender or food processor, add the diced mangoes, lime juice, and vanilla extract. Blend until you achieve a smooth purée.
  3. In a large bowl, whip the heavy cream with a hand mixer or stand mixer until it forms soft peaks. Be careful not to over-whip.
  4. Gently fold the mango purée into the whipped cream. Then, add sweetened condensed milk and a pinch of salt to balance the sweetness. Fold until all ingredients are nicely incorporated.
  5. Spoon the mixture into serving dishes or cups and refrigerate for at least 2 hours to allow the mousse to set properly.
  6. Top with your favorite toppings, such as additional mango slices, whipped cream, or coconut flakes, before serving.

Notes

Store in the refrigerator for 3-4 days in an airtight container. Avoid adding toppings until ready to serve to keep it fresh.
