Ingredients
  

For the Salmon
  • 4 pieces salmon fillets (about 6 ounces each)
  • 1 cup heavy cream Do not use low-fat cream for best results.
  • 1 each lemon, juice
  • 1 each lemon, zest
  • 2 tablespoons fresh dill, chopped Substitute with parsley or chives if desired.
  • 2 cloves garlic, minced
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the heavy cream, lemon juice, lemon zest, minced garlic, and half the fresh herbs. Season with salt and pepper, then mix well.
  3. Place the salmon fillets skin side down in a baking dish. Pour the creamy lemon herb sauce over the fillets, ensuring they are well coated.
Baking
  1. Cover the dish with aluminum foil and bake for 15 minutes.
  2. Remove the foil and bake for an additional 5–10 minutes, or until the salmon is cooked through and flakes easily.
  3. Remove from the oven, sprinkle with the remaining herbs, and serve warm.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 3 days and reheat in a preheated oven for 10-15 minutes. Can also be frozen for up to 3 months.
