  • 2 cups cooked rice Have your rice cooked beforehand.
  • 4 cloves garlic, minced
  • 1 cup heavy cream Can be substituted with Greek yogurt or low-fat milk.
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Pepper
  • Chopped parsley for garnish

Preparation
  1. Gather all the ingredients and prep the onions and garlic. Dice the chicken into bite-sized pieces.
  2. In a large skillet, heat the olive oil over medium heat.
Cooking
  1. Add the diced chicken to the skillet, seasoning it with salt and pepper. Cook for about 5-7 minutes, until the chicken is cooked through and golden brown.
  2. Stir in the minced garlic, allowing it to sauté for an additional 1-2 minutes until fragrant but not burnt.
  3. Pour in the chicken broth, stirring to deglaze the pan. Let it simmer for about 3 minutes.
  4. Add the heavy cream and allow the sauce to simmer gently, thickening it for about 5-7 minutes. Taste and adjust seasoning as needed.
Serving
  1. Scoop the rice into bowls and generously ladle the creamy garlic chicken mixture on top. Garnish with chopped parsley.

Notes

Let the chicken sear properly for the best texture. Be careful not to overcook the garlic to avoid a bitter taste. Leftovers can be stored in an airtight container for up to 3 days or frozen for about a month.
