- Begin by spraying the inside of your crockpot with non-stick cooking spray or lightly greasing it with olive oil to ensure easy cleanup.
- In a medium bowl, combine the vegetable broth, cream (or coconut milk), minced garlic, Italian seasoning, salt, and pepper. Stir well.
- Add the tortellini and the liquid mixture to the slow cooker. If you're using fresh spinach, fold it in at this stage for added nutrition.
Cooking
- Set your slow cooker to low and cook for 3-4 hours or on high for 1.5-2 hours. The tortellini should be tender and the sauce creamy.
- About 15 minutes before serving, stir in the Parmesan cheese until melted and well combined.
