  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk for a non-dairy option
  • 1 cup grated Parmesan cheese plus more for serving
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

  • 2 cups fresh spinach (optional)
  • to taste Olive oil (for sautéing, optional)

Method
 

Preparation
  1. Begin by spraying the inside of your crockpot with non-stick cooking spray or lightly greasing it with olive oil to ensure easy cleanup.
  2. In a medium bowl, combine the vegetable broth, cream (or coconut milk), minced garlic, Italian seasoning, salt, and pepper. Stir well.
  3. Add the tortellini and the liquid mixture to the slow cooker. If you're using fresh spinach, fold it in at this stage for added nutrition.
Cooking
  1. Set your slow cooker to low and cook for 3-4 hours or on high for 1.5-2 hours. The tortellini should be tender and the sauce creamy.
  2. About 15 minutes before serving, stir in the Parmesan cheese until melted and well combined.
Serving
  1. Garnish with more cheese or fresh herbs if desired, and dig in!

Notes

Consider substitutions like mozzarella or ricotta cheese for added variety. Keep an eye on the cooking time, as different slow cookers can vary. Avoid overcooking to prevent the tortellini from breaking apart.
