  • 6-8 pieces medium potatoes, diced
  • 1 piece onion, chopped
  • 4 cups chicken broth Use low sodium if preferred
  • 1 block (8 oz) cream cheese Cut into cubes
  • 1 cup shredded cheddar cheese Add at the end of cooking
  • 1/2 cup bacon bits Halal-friendly
  • 1 cup heavy cream Add at the end of cooking
  • to taste salt
  • to taste pepper
  • as needed Chives for garnish Fresh

Preparation
  1. Begin by dicing your potatoes into small, even pieces, and chop the onion finely.
Cooking
  1. In your slow cooker, place the diced potatoes and chopped onions. Pour in the chicken broth until the vegetables are submerged.
  2. Add the cream cheese cubes to the mixture.
  3. Season with salt, pepper, and halal-friendly bacon bits.
  4. Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours, stirring occasionally.
  5. About half an hour before serving, add the shredded cheddar cheese and heavy cream to the pot. Stir well and allow it to melt into the soup.
  6. Once ready, top with fresh chives for an added touch!

Notes

For best results, cook on low heat to develop flavors. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
