- Crack the eggs into a mixing bowl and add the cottage cheese. Season with a pinch of salt and pepper. Whisk together until just combined, leaving some cottage cheese chunky for texture.
Cooking
- Place a non-stick skillet over medium-low heat and add the butter. Let it melt and coat the pan.
- Pour your egg mixture into the skillet. Allow it to sit for about 30 seconds, then gently stir using a spatula.
- As the edges begin to set, continue to stir while letting areas of the uncooked egg flow to the edges. Cook for around 5-7 minutes until the eggs are soft but cooked through.
- Once done, remove from heat and serve immediately. Top with fresh chives or green onions if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat carefully in the microwave with short intervals to maintain creaminess.
