Preparation
  1. Crack the eggs into a mixing bowl and add the cottage cheese. Season with a pinch of salt and pepper. Whisk together until just combined, leaving some cottage cheese chunky for texture.
Cooking
  1. Place a non-stick skillet over medium-low heat and add the butter. Let it melt and coat the pan.
  2. Pour your egg mixture into the skillet. Allow it to sit for about 30 seconds, then gently stir using a spatula.
  3. As the edges begin to set, continue to stir while letting areas of the uncooked egg flow to the edges. Cook for around 5-7 minutes until the eggs are soft but cooked through.
  4. Once done, remove from heat and serve immediately. Top with fresh chives or green onions if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat carefully in the microwave with short intervals to maintain creaminess.
