  • 1 cup walnuts, chopped Can be toasted for enhanced flavor.
  • 1 cup Greek yogurt Use low-fat or plant-based yogurt for a lighter version.
  • 2 tablespoons honey Adjust sweetness to taste.
  • 1 teaspoon cinnamon Sprinkle some on top for garnish if desired.
  • 1 tablespoon lemon juice Prevents apple browning.

Method
 

Preparation
  1. Wash and dice the apples into bite-sized pieces, keeping the skin on.
  2. Coarsely chop the walnuts, and optionally toast them in a dry pan for a couple of minutes.
  3. In a medium-sized bowl, mix the Greek yogurt, honey, cinnamon, and lemon juice until smooth.
  4. In a large bowl, combine the diced apples and chopped walnuts with the Greek yogurt dressing, gently folding until well-coated.
Serving
  1. Chill in the refrigerator for about 20 minutes or serve immediately.
  2. Add a sprinkle of cinnamon on top for garnish before serving.

Notes

For best flavor, enjoy the salad the same day. Store in an airtight container in the fridge for up to 24 hours, adding walnuts fresh before serving to maintain crunch.
