Preparation
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add the diced onions, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables become tender and the onions are translucent.
  3. Pour in the 4 cups of chicken broth. Stir well to combine, and bring the mixture to a gentle boil.
  4. Add the shredded cooked chicken and the cooked wild rice to the pot. Stir until evenly distributed.
  5. Lower the heat to a simmer. Slowly pour in the 1 cup of heavy cream, stirring to blend it into the soup.
  6. Add salt and pepper to taste. Let the soup simmer for an additional 10-15 minutes, allowing the flavors to meld together.
  7. Remove the soup from heat and sprinkle with fresh parsley for garnish. Serve warm and enjoy!

Notes

For extra flair, consider adding toppings like crispy croutons, chopped green onions, or freshly grated cheese. Store in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months. Thaw overnight in the fridge before reheating.
