- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken pieces, seasoning with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and fully cooked (about 5-7 minutes). Remove the chicken from the skillet and set aside.
- In the same skillet, add diced onions and sliced mushrooms. Sauté for about 4-5 minutes, allowing them to become tender.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer, cooking for 2-3 minutes until it slightly thickens.
- Add the cooked chicken back to the skillet. Toss in the fresh spinach and mix gently until the spinach wilts.
- Check for seasoning and adjust salt and pepper as necessary. If desired, sprinkle grated Parmesan on top before serving.

Notes
For a lighter version, swap heavy cream for milk, but the sauce may be less creamy. Use half-and-half if heavy cream isn't available. Avoid overcrowding the pan when sautéing mushrooms to help them brown better.
