  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces mushrooms, sliced any variety you prefer
  • 2 cups fresh spinach leaves
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Optional: Grated Parmesan cheese for topping

Preparation
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the chicken pieces, seasoning with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and fully cooked (about 5-7 minutes). Remove the chicken from the skillet and set aside.
  3. In the same skillet, add diced onions and sliced mushrooms. Sauté for about 4-5 minutes, allowing them to become tender.
  4. Stir in minced garlic and cook for an additional minute until fragrant.
  5. Pour in the heavy cream and bring to a gentle simmer, cooking for 2-3 minutes until it slightly thickens.
  6. Add the cooked chicken back to the skillet. Toss in the fresh spinach and mix gently until the spinach wilts.
  7. Check for seasoning and adjust salt and pepper as necessary. If desired, sprinkle grated Parmesan on top before serving.
Serving
  1. Spoon the creamy mixture over rice or pasta and enjoy this comforting meal.

Notes

For a lighter version, swap heavy cream for milk, but the sauce may be less creamy. Use half-and-half if heavy cream isn't available. Avoid overcrowding the pan when sautéing mushrooms to help them brown better.
