Ingredients

Brownie Base
  • 1 cup unsalted butter Melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
Cheesecake Layer
  • 1 package cream cheese (8 oz) Softened
  • 1 cup powdered sugar
Topping
  • 1 cup cherry pie filling

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  2. In a large mixing bowl, melt the unsalted butter and mix in granulated sugar until well combined. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  4. In another bowl, beat the softened cream cheese until smooth. Gradually mix in the powdered sugar until creamy and free of lumps.
Assembly and Baking
  1. Pour half of the brownie batter into the prepared pan, smoothing it out. Top with the cheesecake layer, then scoop spoonfuls of the remaining brownie batter on top and swirl gently to create a marbled effect.
  2. Bake for 30-35 minutes or until the edges are set and a toothpick inserted in the center comes out with moist crumbs.
  3. Once cooled, spread the cherry pie filling evenly over the top, slice into squares, and serve.

Notes

For a lighter option, consider using Greek yogurt instead of cream cheese. Keep an eye on the baking time to avoid overbaking and ensure a fudgy texture. Store in an airtight container for up to one week or freeze for up to three months.
