Preparation
- Start by cutting a ripe cantaloupe in half, removing the seeds, and scooping out the flesh. Measure 2 cups of the cantaloupe and set it aside.
- In a blender, add the cantaloupe puree, Greek yogurt, honey (or maple syrup), lemon juice, vanilla extract, and a pinch of salt. Blend until smooth.
- Taste the mixture and adjust sweetness by adding more honey or maple syrup if needed, then blend again.
- Pour the mixture into an airtight container and freeze for about 30 minutes to 1 hour.
- If using an ice cream maker, pour the chilled mixture into it and follow the manufacturer's instructions. If not, place back in the freezer and stir every 30 minutes to break up ice crystals until fully frozen, which should take about 3-4 hours.
- Once the yogurt has a creamy, scoopable texture, serve and enjoy.
Notes
For best results, use ripe cantaloupe. Chill the blender and ingredients beforehand for a creamier texture. Store in an airtight container in the freezer for up to one month.
