Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy, about 3-4 minutes.
  3. Mix in the instant coffee granules and vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour and salt and gradually add to the wet ingredients, mixing until just combined.
  5. Scoop tablespoon-sized portions of dough, roll into balls, and place on a lined baking sheet with space in between.
  6. Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden.
