Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy, about 3-4 minutes.
- Mix in the instant coffee granules and vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour and salt and gradually add to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough, roll into balls, and place on a lined baking sheet with space in between.
- Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
