Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, melted
For the filling
  • 8 oz cream cheese, softened Should be at room temperature.
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon For extra zing.
  • Additional powdered sugar for dusting, optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a mixing bowl, combine the flour and powdered sugar. Add the melted butter and mix until cbly. Press the mixture into the bottom of the prepared baking dish to form the crust. Bake for 15 minutes or until lightly golden.
  3. While the crust is baking, in another bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and mix until combined.
  4. Then, add the eggs, lemon juice, lemon zest, and vanilla extract. Continue mixing until the mixture is creamy and smooth.
  5. Pour the cream cheese filling over the pre-baked crust and spread it evenly. Bake for an additional 25-30 minutes, or until the center is set and no longer jiggles.
  6. Once baked, remove the pan from the oven. Let it cool completely at room temperature, then refrigerate for at least two hours. Once chilled, cut into squares, dust with powdered sugar, and enjoy!

Notes

Store leftover Cream Cheese Lemon Bars in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze for up to 3 months. Thaw in the refrigerator overnight.
