  • 2 cans cans (15 oz each) of corn, drained Alternatively, use 4 cups of fresh corn.
  • 8 oz cream cheese, softened Make sure it's at room temperature for easy mixing.
  • 1/2 cup unsalted butter, melted Supports the creamy texture of the casserole.
  • 1/2 cup sugar Adds sweetness to balance the flavors.
  • 1/2 cup milk For a creamier texture.
  • 1 cup shredded cheddar cheese Divided for topping.
  • 1/2 teaspoon salt Enhances overall flavor.
  • 1/4 teaspoon black pepper Adds a touch of spice.
  • 2 eggs beaten Helps to bind the ingredients.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese and melted butter. Mix well until smooth and creamy.
  3. Stir in the drained corn, sugar, milk, salt, and pepper. Once well mixed, gently fold in the beaten eggs and half of the shredded cheddar cheese.
  4. Pour the mixture into a greased 9x13 inch casserole dish and spread it evenly.
  5. Bake in the preheated oven for about 45-50 minutes, or until the casserole is set and the top is lightly golden.
  6. About 5 minutes before it's done, sprinkle the remaining cheddar cheese on top.
  7. Let the casserole cool for a few minutes before serving.

Notes

Serve alongside crispy fried chicken, grilled vegetables, or a crisp green salad. Store leftovers covered in the fridge for up to 3 days, or freeze portions for up to 3 months.
