Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened cream cheese and melted butter. Mix well until smooth and creamy.
- Stir in the drained corn, sugar, milk, salt, and pepper. Once well mixed, gently fold in the beaten eggs and half of the shredded cheddar cheese.
- Pour the mixture into a greased 9x13 inch casserole dish and spread it evenly.
- Bake in the preheated oven for about 45-50 minutes, or until the casserole is set and the top is lightly golden.
- About 5 minutes before it's done, sprinkle the remaining cheddar cheese on top.
- Let the casserole cool for a few minutes before serving.
Notes
Serve alongside crispy fried chicken, grilled vegetables, or a crisp green salad. Store leftovers covered in the fridge for up to 3 days, or freeze portions for up to 3 months.
