  • 8 oz goat cheese, softened Ensure cheese is at room temperature for easy mixing.
  • 1/2 cup chopped pecans Reserve 1/4 cup for coating.
  • 1/2 cup dried cranberries, chopped
  • 2 tbsp fresh parsley, chopped For both mixing in and coating.
  • 1 tbsp honey Adjust to taste if less sweetness is desired.
  • 1/4 tsp garlic powder
  • 1/4 tsp salt

Preparation
  1. Soften the Goat Cheese: Start by bringing your goat cheese to room temperature.
  2. Mix the Ingredients: In a mixing bowl, combine the softened goat cheese, honey, garlic powder, and salt. Mix until creamy.
  3. Add the Mix-ins: Fold in the chopped cranberries and 1/4 cup of the chopped pecans.
  4. Shape the Ball: Shape the mixture into a ball, about the size of a baseball for easy serving.
  5. Coat the Ball: Roll the cheese ball in the remaining chopped pecans and chopped parsley.
  6. Chill: Place the cheese ball on a plate, cover with plastic wrap, and refrigerate for at least 1 hour.
  7. Serve: Once chilled, serve with crackers, sliced baguette, or fresh fruit.

Notes

Store in an airtight container in the refrigerator for up to a week. You can freeze it by wrapping tightly in plastic wrap.
