- Soften the Goat Cheese: Start by bringing your goat cheese to room temperature.
- Mix the Ingredients: In a mixing bowl, combine the softened goat cheese, honey, garlic powder, and salt. Mix until creamy.
- Add the Mix-ins: Fold in the chopped cranberries and 1/4 cup of the chopped pecans.
- Shape the Ball: Shape the mixture into a ball, about the size of a baseball for easy serving.
- Coat the Ball: Roll the cheese ball in the remaining chopped pecans and chopped parsley.
- Chill: Place the cheese ball on a plate, cover with plastic wrap, and refrigerate for at least 1 hour.
- Serve: Once chilled, serve with crackers, sliced baguette, or fresh fruit.
