Ingredients
  

Cheese Base
  • 8 ounces cream cheese, softened Ensure it is softened to room temperature for easier mixing.
  • 1 cup shredded cheddar cheese
Flavor Enhancers
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pecans, chopped Reserve some chopped pecans for coating.
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
Garnish
  • Fresh herbs for garnish (optional)

Method
 

Preparation
  1. Gather all your ingredients and soften your cream cheese at room temperature for about 15 minutes.
Mixing
  1. In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Blend until fully combined and creamy.
  2. Add the chopped dried cranberries, chopped pecans, green onions, garlic powder, onion powder, and a pinch of salt and pepper to the cheese mixture. Mix until well-blended.
Shaping
  1. Transfer the cheese mixture onto a sheet of plastic wrap. Shape it into a log using the wrap to help.
  2. Twist the ends of the plastic wrap and refrigerate for at least two hours, or until firm.
Coating
  1. Remove the cheese log from the wrap and roll it in the remaining chopped pecans, pressing gently to ensure they stick.
Serving
  1. Transfer the cheese log onto a serving platter. Garnish with fresh herbs if desired. Serve with crackers or veggies.

Notes

For optimal flavor, make this log a day ahead of your gathering. Store in the refrigerator for up to five days or freeze for up to three months. Thaw overnight in the refrigerator and serve chilled. Reheating is not recommended.
