  • 2 cups cooked chicken, diced Ensure chicken is fully cooked.
  • 1 cup cranberry sauce
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a healthier option.
  • 1/4 cup chopped celery
  • 1/4 cup chopped green onions
  • to taste Salt and pepper
  • 8 slices of bread
  • Lettuce leaves (optional) Can be added for extra crunch.

Method
 

Preparation
  1. Cook the chicken, if not already done. You can poach, grill, or roast it until fully cooked.
  2. In a large bowl, combine the diced chicken, cranberry sauce, mayonnaise, chopped celery, and chopped green onions. Mix until well combined and season with salt and pepper to taste.
Assembly
  1. Lay a slice of bread on a clean surface. If using lettuce, place a leaf on the bread.
  2. Spoon a generous amount of the chicken salad mixture onto the bread. Top with another slice of bread and gently press down.
  3. Cut each sandwich into quarters or desired size and arrange on a platter.
  4. Serve with napkins for easy eating.

Notes

Prepare the chicken ahead of time and store salad in an airtight container for up to 3 days. Freezing is possible for the chicken salad (without bread) for up to 2 months.
