Preparation
- Cook the chicken, if not already done. You can poach, grill, or roast it until fully cooked.
- In a large bowl, combine the diced chicken, cranberry sauce, mayonnaise, chopped celery, and chopped green onions. Mix until well combined and season with salt and pepper to taste.
Assembly
- Lay a slice of bread on a clean surface. If using lettuce, place a leaf on the bread.
- Spoon a generous amount of the chicken salad mixture onto the bread. Top with another slice of bread and gently press down.
- Cut each sandwich into quarters or desired size and arrange on a platter.
- Serve with napkins for easy eating.
