Preparation
- Preheat your oven to 350°F (175°C) and prepare a baking dish (approximately 9x9 inches) by greasing it lightly or lining it with parchment paper.
- In a large mixing bowl, combine the flour, rolled oats, brown sugar, baking soda, and salt. Mix well until there are no lumps.
- Pour in the melted butter, egg, and vanilla extract. Stir until everything is well combined.
- Gently fold the dried cranberries and white chocolate chips into the batter, making sure they are evenly distributed.
- Pour the batter into the prepared baking dish, spreading it evenly across the bottom.
Baking
- Bake in the preheated oven for 25-30 minutes or until the edges turn golden brown and a toothpick inserted into the center comes out clean.
Topping
- While the bars are baking, prepare the topping. In a separate bowl, beat together the softened cream cheese and powdered sugar until smooth. Add the lemon juice and mix until well combined.
- Once the bars are out of the oven, allow them to cool completely. Once cool, spread the cream cheese topping evenly over the bars.
- Melt the additional white chocolate chips and drizzle over the topped bars for an extra touch of sweetness.
Serving
- Once the chocolate has set, slice the bars into squares and serve!
