Ingredients
  

For the Bars
  • 1 cup all-purpose flour Fluffed and spooned for measurement
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup dried cranberries
  • 1/3 cup white chocolate chips
  • 1 egg Room temperature
  • 1 teaspoon vanilla extract
For the Topping
  • 4 oz cream cheese (softened) Room temperature
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1/4 cup white chocolate chips (melted for drizzling)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking dish (approximately 9x9 inches) by greasing it lightly or lining it with parchment paper.
  2. In a large mixing bowl, combine the flour, rolled oats, brown sugar, baking soda, and salt. Mix well until there are no lumps.
  3. Pour in the melted butter, egg, and vanilla extract. Stir until everything is well combined.
  4. Gently fold the dried cranberries and white chocolate chips into the batter, making sure they are evenly distributed.
  5. Pour the batter into the prepared baking dish, spreading it evenly across the bottom.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the edges turn golden brown and a toothpick inserted into the center comes out clean.
Topping
  1. While the bars are baking, prepare the topping. In a separate bowl, beat together the softened cream cheese and powdered sugar until smooth. Add the lemon juice and mix until well combined.
  2. Once the bars are out of the oven, allow them to cool completely. Once cool, spread the cream cheese topping evenly over the bars.
  3. Melt the additional white chocolate chips and drizzle over the topped bars for an extra touch of sweetness.
Serving
  1. Once the chocolate has set, slice the bars into squares and serve!

Notes

For added flavor, try experimenting with different toppings like chopped nuts or a sprinkle of cinnamon. Store in an airtight container in the refrigerator for up to a week, or freeze for 2-3 months.
