Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Toss in the minced garlic and diced carrots, cooking for an additional 5 minutes until fragrant.
Cooking the Soup
  1. Pour in the vegetable broth and bring it to a gentle boil.
  2. Add the drained white beans, stirring to combine. Allow everything to simmer for about 10 minutes.
  3. Add the chopped kale to the pot. Simmer for another 5 minutes until the kale is tender and bright green.
Finishing Touches
  1. Season with salt, pepper, and the lemon juice, adjusting the flavors to your liking.
  2. Give it one last gentle stir, and voila! Your cozy soup is ready to serve!

Notes

For customizations, consider other greens like spinach or Swiss chard. To enhance flavors, allow the soup to simmer a bit longer.
