Ingredients

Main Ingredients
  • 1 pound meat or beans (e.g., chicken, beef, lentils) Make sure all meat is Halal certified.
  • 4 cups broth (chicken, beef, or vegetable) Ensure broth is free of non-permissible ingredients.
  • 2 cups vegetables (e.g., carrots, potatoes, onions, celery) Chop veggies into even-sized pieces.
  • 2 cloves garlic, minced
  • 1 teaspoon dried herbs (e.g., thyme, rosemary, basil)
  • to taste salt and pepper

Method

Preparation
  1. Start by washing and chopping your vegetables into bite-sized pieces. If you’re using meat, make sure it’s cut into manageable chunks.
  2. Place the meat or beans along with the chopped vegetables into the crockpot.
  3. Add the 4 cups of broth, ensuring all the ingredients are submerged for even cooking.
  4. Add the minced garlic, dried herbs, and season with salt and pepper to taste. Give it a gentle stir to combine.
  5. Cover your crockpot and set it on low for 6-8 hours or high for 3-4 hours, depending on your time availability.
  6. When the cooking time is up, taste your stew. Adjust the seasoning if necessary, adding more salt or pepper as per your preference.
  7. Ladle the soup into bowls and enjoy with your favorite bread or croutons on the side!

Notes

Feel free to swap out meats for beans for a vegetarian option. Chickpeas or black beans work wonderfully and are Halal-friendly! Avoid overfilling the crockpot, and try to leave the lid closed during cooking. Refrigerate leftovers in an airtight container for up to five days, or freeze for up to three months.
