  • 1 lb ground beef (Halal)
  • 1 can kidney beans, drained
  • 1 can pinto beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • Salt and pepper to taste
  • 1 cup beef broth (Halal)

Method
 

Preparation
  1. Start by chopping the onion and mincing the garlic.
Cooking
  1. In a large pot over medium heat, add the ground beef. Cook, stirring frequently, until it’s browned and no longer pink.
  2. Drain excess fat if necessary.
  3. Add the chopped onion and minced garlic to the pot with the beef. Sauté for 3-4 minutes until the onion is translucent and fragrant.
  4. Stir in the drained kidney beans, pinto beans, corn, and diced tomatoes.
  5. Sprinkle in the chili powder, cumin, salt, and pepper. Pour in the beef broth and stir everything together.
  6. Bring the pot to a gentle boil, then reduce heat and let it simmer for about 15-20 minutes.
  7. Once it’s thick and hearty, taste and adjust the seasoning if needed.
  8. Serve hot in bowls adorned with your favorite toppings.

Notes

Feel free to substitute ground beef with ground chicken or turkey for a leaner option. Always taste before serving to adjust seasonings. It can store in the refrigerator for up to 3 days or be frozen for up to 3 months.
