- Start by chopping the onion and mincing the garlic.
Cooking
- In a large pot over medium heat, add the ground beef. Cook, stirring frequently, until it’s browned and no longer pink.
- Drain excess fat if necessary.
- Add the chopped onion and minced garlic to the pot with the beef. Sauté for 3-4 minutes until the onion is translucent and fragrant.
- Stir in the drained kidney beans, pinto beans, corn, and diced tomatoes.
- Sprinkle in the chili powder, cumin, salt, and pepper. Pour in the beef broth and stir everything together.
- Bring the pot to a gentle boil, then reduce heat and let it simmer for about 15-20 minutes.
- Once it’s thick and hearty, taste and adjust the seasoning if needed.
