Ingredients
  

For the Meatloaf
  • 1 lb ground beef Can substitute with ground turkey or chicken for a leaner option.
  • 1 cup breadcbs
  • 1/2 cup onion, finely chopped
  • 1/4 cup milk
  • 1 each egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Topping
  • 2 cups mashed potatoes Can use store-bought or homemade.
  • 1 cup shredded cheese Use cheddar or your favorite type of cheese.
  • Fresh herbs for garnish Optional.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, breadcbs, chopped onion, milk, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix until well combined, being careful not to overwork the meat.
  3. Transfer the meat mixture to a greased 9x13-inch baking dish. Shape it into a loaf in the center of the dish.
  4. Spoon the mashed potatoes over the meatloaf, spreading it evenly. If using store-bought mashed potatoes, you can use a piping bag to create decorative swirls.
  5. Sprinkle the shredded cheese over the top of the mashed potatoes.
Cooking
  1. Place the casserole in the preheated oven and bake for 30-35 minutes, or until the meatloaf is cooked through (internal temperature of 160°F) and the cheese is bubbly and golden.
  2. Once out of the oven, let it cool for a few minutes. Garnish with fresh herbs if desired before slicing and serving.

Notes

This dish pairs well with a fresh garden salad, sautéed green beans, or buttered corn. For a sweeter side, consider glazed carrots. Enjoy with iced tea or lemonade.
