Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Mixing
  1. In a separate bowl, mix the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  2. Gently fold in the oats, chocolate chips, and nuts if using.
Baking
  1. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  3. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze cookies in a single layer and they’ll last for about three months.
