Method
Cook the Pasta
- Begin by boiling a large pot of salted water. Add the bowtie pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water and then drain the rest. Set the pasta aside.
Sauté the Chicken
- In a large skillet over medium heat, melt the cowboy butter. Once melted, add the diced chicken breasts. Season with salt and pepper. Sauté until the chicken is cooked through, about 5 to 7 minutes.
Add Broccoli
- Toss in the broccoli florets with the chicken and cook for an additional 3 to 4 minutes until the broccoli is tender but still vibrant in color.
Combine Everything
- Add the cooked bowtie pasta to the skillet. Pour in the reserved pasta water, lemon juice, and zest. Stir everything together until well combined and heated through.
Serve
- Plate your delicious Cowboy Butter Lemon Bowtie Chicken with Broccoli and sprinkle with Parmesan cheese if used. Enjoy!
Notes
Store leftovers in an airtight container for up to 3 days. To reheat, warm in a skillet over medium-low heat, adding a splash of water to revive the creamy sauce. For freezing, cool completely before transferring to a freezer-safe container, which will keep it fresh for up to 2 months.
