Preparation
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Blend until smooth using a food processor for best results.
- In a separate bowl, whisk together the protein powder, cocoa powder, oats, baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the wet mixture, stirring until well incorporated. If including chocolate chips or nuts, fold them in at this stage.
- Pour the brownie batter into the prepared baking pan, spreading it out evenly.
Baking
- Place the pan in the oven and bake for approximately 25 minutes, or until a toothpick comes out clean.
- Allow the brownies to cool in the pan before cutting them into squares. Serve and enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to a week. For longer storage, freeze for up to 3 months, sliced with parchment paper between each piece to prevent sticking.
