Preparation
  1. In a medium-sized mixing bowl, add 1 cup of cottage cheese and 2 tablespoons of peanut butter.
  2. Pour in honey or maple syrup, and add 1 teaspoon of vanilla extract to enhance the flavor.
  3. Using a handheld mixer or a blender, mix everything together until smooth and creamy.
  4. Spoon the mousse into serving bowls or glasses.
  5. If desired, sprinkle a bit of cocoa powder or add some chocolate chips on top to garnish.
  6. For extra refreshing treat, chill in the refrigerator for about 30 minutes before serving.

Notes

Don’t blend too long; you want a silky texture, not whipped cream. Adjust sweetness to taste, as some peanut butters can be sweeter than others. Store leftovers in an airtight container for up to 3 days.
