- In a medium-sized mixing bowl, add 1 cup of cottage cheese and 2 tablespoons of peanut butter.
- Pour in honey or maple syrup, and add 1 teaspoon of vanilla extract to enhance the flavor.
- Using a handheld mixer or a blender, mix everything together until smooth and creamy.
- Spoon the mousse into serving bowls or glasses.
- If desired, sprinkle a bit of cocoa powder or add some chocolate chips on top to garnish.
- For extra refreshing treat, chill in the refrigerator for about 30 minutes before serving.
Notes
Don’t blend too long; you want a silky texture, not whipped cream. Adjust sweetness to taste, as some peanut butters can be sweeter than others. Store leftovers in an airtight container for up to 3 days.
