  • 1 teaspoon baking powder

  • 1 tablespoon olive oil

Preparation
  1. In a large mixing bowl, combine 1 cup of cottage cheese, 1 cup of all-purpose flour, 1 egg, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1 tablespoon of olive oil. Stir until the mixture forms a soft dough.
  2. On a floured surface, knead your dough gently for about 1-2 minutes until it becomes smooth. If your dough is too sticky, feel free to add a little extra flour.
  3. Divide the dough into four equal portions. Using your hands or a rolling pin, shape each portion into a flat round about 1/4 inch thick.
Cooking
  1. Heat a skillet over medium heat. Once hot, place the flatbread in the skillet without any oil. Cook for about 2-3 minutes on each side until it’s golden brown and has lovely char marks. Repeat with remaining dough.
Serving
  1. Serve warm. This flatbread is delightful when paired with dips or as a wrap for your favorite fillings.

Notes

To keep your Cottage Cheese Flatbread fresh, store it in an airtight container in the refrigerator for up to 3 days or freeze for about a month. Reheat in a skillet over low heat or a preheated oven at 350°F (175°C).
