Preparation
- In a large mixing bowl, combine 1 cup of cottage cheese, 1 cup of all-purpose flour, 1 egg, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1 tablespoon of olive oil. Stir until the mixture forms a soft dough.
- On a floured surface, knead your dough gently for about 1-2 minutes until it becomes smooth. If your dough is too sticky, feel free to add a little extra flour.
- Divide the dough into four equal portions. Using your hands or a rolling pin, shape each portion into a flat round about 1/4 inch thick.
Cooking
- Heat a skillet over medium heat. Once hot, place the flatbread in the skillet without any oil. Cook for about 2-3 minutes on each side until it’s golden brown and has lovely char marks. Repeat with remaining dough.
Serving
- Serve warm. This flatbread is delightful when paired with dips or as a wrap for your favorite fillings.
Notes
To keep your Cottage Cheese Flatbread fresh, store it in an airtight container in the refrigerator for up to 3 days or freeze for about a month. Reheat in a skillet over low heat or a preheated oven at 350°F (175°C).
