  • 1 large egg
  • 1 cup flour Or substitute with almond flour for a gluten-free option.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon sugar

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine 1 cup of cottage cheese and 1 egg. Mix well until uniform, leaving some lumps.
  3. In a separate bowl, whisk together 1 cup of flour, 1/2 tsp baking soda, 1/4 tsp salt, and 1 tbsp sugar.
  4. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  5. Lightly flour your countertop and shape the dough into balls, poking a hole in the center to form flagels.
  6. Line a baking sheet with parchment paper and arrange the shaped flagels, allowing space for spreading.
  7. Bake for about 20 minutes or until golden brown.
  8. Allow to cool slightly before serving.

Notes

For optimal freshness, store flagels in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months. Reheat in a toaster or oven at 350°F (175°C) for about 10 minutes.
