- In a medium bowl, combine 1 cup of cottage cheese and 1 egg. Mix well until uniform, leaving some lumps.
- In a separate bowl, whisk together 1 cup of flour, 1/2 tsp baking soda, 1/4 tsp salt, and 1 tbsp sugar.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Lightly flour your countertop and shape the dough into balls, poking a hole in the center to form flagels.
- Line a baking sheet with parchment paper and arrange the shaped flagels, allowing space for spreading.
- Bake for about 20 minutes or until golden brown.
- Allow to cool slightly before serving.

For optimal freshness, store flagels in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months. Reheat in a toaster or oven at 350°F (175°C) for about 10 minutes.
