Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the cottage cheese and eggs, and whisk until blended.
- Add the spinach and diced vegetables to the mixture and stir well.
- Mix in the shredded cheese along with salt and pepper.
- Grease a pie dish or a round cake pan lightly with olive oil. Pour the mixture into the pan.
Baking
- Bake for 30-35 minutes, or until the top is golden brown and slightly risen.
- Allow to cool slightly before slicing. Serve warm or at room temperature.
Notes
For best flavor, top with fresh herbs or a dollop of yogurt. Store leftovers in an airtight container in the refrigerator for up to 4 days.
