  • 1 cup cottage cheese
  • 4 pieces eggs Large eggs preferred
  • 1 cup spinach (fresh or frozen) Use thawed and drained if frozen
  • 1 cup diced mixed vegetables (bell peppers, onions, or mushrooms) Choose favorite vegetables
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil (optional) For greasing the pan
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the cottage cheese and eggs, and whisk until blended.
  3. Add the spinach and diced vegetables to the mixture and stir well.
  4. Mix in the shredded cheese along with salt and pepper.
  5. Grease a pie dish or a round cake pan lightly with olive oil. Pour the mixture into the pan.
Baking
  1. Bake for 30-35 minutes, or until the top is golden brown and slightly risen.
  2. Allow to cool slightly before slicing. Serve warm or at room temperature.

Notes

For best flavor, top with fresh herbs or a dollop of yogurt. Store leftovers in an airtight container in the refrigerator for up to 4 days.
