Preparation
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the cottage cheese and eggs. Blend them together using a fork or whisk until smooth.
  3. Stir in the almond flour, baking powder, and a pinch of salt, mixing until evenly combined.
  4. Drop mounds of the mixture onto the prepared baking sheet, shaping them into rounds and leaving space between each.
Baking
  1. Bake in the oven for 25-30 minutes until the tops are golden.
  2. Allow the bread to cool on a wire rack for a few minutes before serving.
