Preparation
  1. In a large mixing bowl, combine the ground chicken, cottage cheese, breadcrumbs, chopped green onions, egg, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  2. With your hands, scoop out portions of the mixture and shape them into patties, approximately 1/2 inch thick.
  3. In a deep skillet or frying pan, heat oil over medium heat until hot but not smoking.
Cooking
  1. Carefully place the formed patties into the hot oil, frying them for about 4-5 minutes on each side until they are golden brown and cooked through.
  2. Once cooked, transfer the patties to a plate lined with paper towels to drain any excess oil.
  3. Serve hot and enjoy!

Notes

For gluten-free, substitute panko breadcrumbs with almond flour. Ensure oil is at the correct temperature to avoid burning the patties and waiting 10-15 minutes after mixing allows flavors to meld beautifully. Store in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes.
