Method
Preparation
- In a large mixing bowl, combine the ground chicken, cottage cheese, breadcrumbs, chopped green onions, egg, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- With your hands, scoop out portions of the mixture and shape them into patties, approximately 1/2 inch thick.
- In a deep skillet or frying pan, heat oil over medium heat until hot but not smoking.
Cooking
- Carefully place the formed patties into the hot oil, frying them for about 4-5 minutes on each side until they are golden brown and cooked through.
- Once cooked, transfer the patties to a plate lined with paper towels to drain any excess oil.
- Serve hot and enjoy!
Notes
For gluten-free, substitute panko breadcrumbs with almond flour. Ensure oil is at the correct temperature to avoid burning the patties and waiting 10-15 minutes after mixing allows flavors to meld beautifully. Store in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes.
