  • ½ cup cucumber, sliced

Method
 

Preparation
  1. Toast the slices of whole grain bread in a toaster or on a skillet until they are golden brown and crispy.
  2. In a bowl, place the cottage cheese and season it with a pinch of salt and pepper, adjusting to taste.
Assembly
  1. Spread a generous layer of the seasoned cottage cheese over each slice of toasted bread.
  2. Top with halved cherry tomatoes and slices of cucumber. Add fresh herbs for added flavor if desired.
  3. Cut the toast into halves or quarters if desired and serve immediately while warm and crispy.

Notes

To retain the crispness, toast the bread just before serving. Use fresh cottage cheese for optimal texture. Store any leftovers in an airtight container for up to 3-4 days in the refrigerator.
