Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, combine softened butter, brown sugar, and granulated sugar. Use a hand mixer to beat until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Then pour in the vanilla extract and mix.
- In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. Slowly add this dry mixture to the wet ingredients, mixing until the dough forms.
- Fold in the chocolate chips and half of the colorful sprinkles until evenly distributed.
- Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the lined baking sheets, ensuring space between each cookie.
- Top each cookie with the remaining colorful sprinkles.
- Bake for 15 to 20 minutes, or until the edges are set and the tops look slightly cracked.
- Allow cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
Notes
For variation, try using half chocolate chips and half white chocolate chips, or substitute nuts for sprinkles. Keep an eye on baking time to achieve the perfect chewy texture.
