  • 1 can corn (drained, about 15 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream Can substitute with Greek yogurt.
  • 3 large eggs
  • 1 teaspoon chili powder (optional) Add for extra spice.
  • 1 cup diced onions (optional)
  • 1 cup diced bell peppers (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cornbread mix, drained corn, shredded cheddar cheese, and sour cream. Add diced onions and bell peppers if desired.
  3. Crack the eggs into the mixture and stir until everything is well combined. Season with chili powder, salt, and pepper to taste.
Baking
  1. Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  2. Bake for about 35-40 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  3. Let the casserole sit for 5-10 minutes before serving.
