  • 2 cups fresh okra, sliced
  • 1 medium onion, diced
  • 1 medium bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 2 cups diced tomatoes (fresh or canned)
  • 1 teaspoon Creole seasoning Adjust based on heat preference.
  • 1 tablespoon olive oil

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5 minutes until they turn soft and fragrant.
  2. Stir in the minced garlic and sliced okra. Cook for an additional 5 minutes, allowing the okra to tenderize and absorb the flavors.
  3. Add the corn kernels and diced tomatoes to the skillet. Stir well to combine, followed by the Creole seasoning, salt, and pepper.
  4. Reduce the heat to low and let the mixture simmer for about 10-15 minutes, stirring occasionally. This allows the flavors to meld beautifully.
  5. Taste the Creole and adjust seasoning if necessary. Once done, remove from heat and serve warm.

Notes

Use fresh ingredients for optimal flavor. Customize the spices based on your heat preference. For a heartier meal, consider adding shrimp or chicken.
