Ingredients

Fruits
  • 1 cup fresh coral-like fruits (lychee, rambutan, or similar) Make sure to peel and prepare these as described.
  • 2 cups assorted tropical fruits (mango, pineapple, kiwi) Chop into bite-sized pieces.
Dressing and Toppings
  • 1/2 cup shredded coconut For topping.
  • 1/4 cup honey or agave syrup Use according to your preference.
  • 1 unit Juice of lime Adds a refreshing tang.

Method

Preparation
  1. Start by peeling your coral-like fruits. For Lychee, simply slice them open, as they have a hard outer shell. For Rambutan, cut around the outer spiky layer and pop out the juicy flesh. Set aside in a large bowl.
  2. Chop the tropical fruits (mango, pineapple, kiwi) into bite-sized pieces. Make sure to remove any skin and place these in the same bowl as the coral fruits.
Mixing
  1. In a separate small bowl, combine the honey (or agave syrup) and lime juice. Stir until well blended.
  2. Pour the honey-lime dressing over the mixed fruits and gently toss to coat all the deliciousness evenly.
Finishing Touches
  1. Sprinkle the shredded coconut on top and allow the dessert to chill in the refrigerator for at least 15 minutes.
  2. Serve in individual bowls or share it in one large beautiful dish. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to two days. Prepare fruit mix and dressing separately in advance to maintain freshness. Avoid freezing as the texture may not hold up.
