  • 0.5 cup milk (any milk of your choice)
  • 1 cup cheese (cheddar or Swiss)
  • 0.5 cup cooked spinach or other vegetables (bell peppers, broccoli, or mushrooms work great)

  • optional diced chicken or cooked turkey sausage for added flavor and protein

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a muffin tin or use silicone muffin cups for easy removal later.
  3. In a large bowl, crack in the eggs and whisk until well combined. Pour in the milk and whisk again until the mixture is fluffy.
  4. Add a dash of salt and pepper to the egg mixture and stir in the cheese, ensuring it’s evenly distributed.
  5. Gently fold in your choice of cooked spinach or other vegetables, integrating them without breaking up the egg mixture.
  6. Carefully pour the egg mixture into each muffin cup to about 3/4 full, leaving room for them to rise.
Baking
  1. Bake in the preheated oven for 18-20 minutes or until the tops are golden and puffed up.
