Preparation
- In a large mixing bowl, whisk together the flour, baking powder, and sugar. In another bowl, combine the milk, egg, vanilla extract, and melted butter. Slowly pour the wet ingredients into the dry ingredients, mixing until just combined.
- Preheat a non-stick skillet over medium heat. Optionally, lightly grease it with cooking spray.
Cooking
- Drop about 1/4 cup of batter onto the skillet for each pancake. Cook until small bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.
Assembly
- Place a sausage patty between two pancakes with a slice of cheddar cheese. Gently squish them together.
Serving
- Serve warm, or arrange on a platter for everyone to enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. They freeze well with parchment paper separating them. Reheat in the microwave or toaster oven.
