Preparation
- Preheat your oven to 350°F (175°C) and grease an 8x4 inch loaf pan.
- In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk until blended.
- In a separate bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add in eggs, lemon juice, lemon zest, and vanilla extract, beating until well combined.
- Gradually mix in the dry ingredients until just combined.
Baking
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Glazing
- While the loaf cools, whisk together powdered sugar and lemon juice to make the glaze.
- Once the loaf has cooled for 10-15 minutes, drizzle the glaze on top.
Serving
- Allow the loaf to cool completely, then slice and enjoy with family and friends.
Notes
Wrap tightly in plastic wrap or foil and store in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat slices in the microwave for about 10 seconds.
