Ingredients
  

For the loaf
  • 1.5 cups all-purpose flour Ensure it is sifted for best results.
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cups unsalted butter, softened Make sure it is softened, not melted.
  • 1 cups granulated sugar
  • 2 large eggs Can be substituted with 1/4 cup unsweetened applesauce each.
  • 0.25 cups lemon juice Freshly squeezed is best.
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract Ensure it is Halal-compliant.
For the glaze
  • 0.5 cups powdered sugar
  • 1 tablespoon lemon juice For added flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x4 inch loaf pan.
  2. In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk until blended.
  3. In a separate bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add in eggs, lemon juice, lemon zest, and vanilla extract, beating until well combined.
  5. Gradually mix in the dry ingredients until just combined.
Baking
  1. Pour batter into the prepared loaf pan and spread evenly.
  2. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Glazing
  1. While the loaf cools, whisk together powdered sugar and lemon juice to make the glaze.
  2. Once the loaf has cooled for 10-15 minutes, drizzle the glaze on top.
Serving
  1. Allow the loaf to cool completely, then slice and enjoy with family and friends.

Notes

Wrap tightly in plastic wrap or foil and store in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat slices in the microwave for about 10 seconds.
