Preparation
- Preheat your oven to 350°F (175°C).
- Roll out the pre-made pie crusts on a lightly floured surface. Cut them into rectangles (about 3x4 inches each).
- In a mixing bowl, combine cookie crumbs, powdered sugar, milk, and vanilla extract. Stir until it forms a smooth mixture.
- Spoon about a tablespoon of the filling onto the center of half of the rectangles. Be sure to leave space at the edges to seal.
- Top with another rectangle and press down the edges with a fork to seal them securely.
- Place the assembled pop tarts on a baking sheet lined with parchment paper.
- Bake for about 15-20 minutes or until golden brown.
- Once out of the oven, let them cool slightly. Drizzle chocolate icing over the top and sprinkle with additional cookie crumbs.
Notes
Store in an airtight container in the fridge for up to 4 days. You can freeze before baking and cook from frozen by adding a few extra minutes to the baking time. Reheat in a toaster oven or regular oven at 350°F (175°C) for about 5 minutes.
