Ingredients
  

For the Ice Cream Base
  • 2 cups heavy cream Use chilled for best results.
  • 1 cup whole milk
  • 3/4 cup granulated sugar Can adjust to taste.
  • 1 teaspoon vanilla extract
  • 1 cup crushed Oreo cookies For mixing into the ice cream.
For the Sandwich
  • 12 cookies cookies (for sandwiching) Use your favorite cookies.
  • Chocolate chips (optional, for garnish) For added decoration and flavor.

Method
 

Preparation
  1. Chill a mixing bowl in the freezer for about 10 minutes.
  2. In the chilled bowl, combine heavy cream, whole milk, granulated sugar, and vanilla extract. Whisk until frothy.
  3. Gently fold in the crushed Oreo cookies until evenly distributed.
Chilling
  1. Pour the mixture into an ice cream maker and churn according to manufacturer's instructions.
  2. If no ice cream maker is available, pour into a shallow dish and freeze, stirring every 30 minutes until creamy (about 2-3 hours).
Assembly
  1. Scoop a generous amount of ice cream onto one cookie and top with another cookie. Gently press together.
  2. Repeat with all cookies.
  3. Freeze the assembled sandwiches for at least 1 hour to firm up.
  4. Garnish with chocolate chips, if desired, before freezing.

Notes

Wrap each sandwich in plastic wrap or store in an airtight container. Lasts up to 2 weeks in the freezer. Avoid refreezing melted sandwiches.
