Preparation
- Chill a mixing bowl in the freezer for about 10 minutes.
- In the chilled bowl, combine heavy cream, whole milk, granulated sugar, and vanilla extract. Whisk until frothy.
- Gently fold in the crushed Oreo cookies until evenly distributed.
Chilling
- Pour the mixture into an ice cream maker and churn according to manufacturer's instructions.
- If no ice cream maker is available, pour into a shallow dish and freeze, stirring every 30 minutes until creamy (about 2-3 hours).
Assembly
- Scoop a generous amount of ice cream onto one cookie and top with another cookie. Gently press together.
- Repeat with all cookies.
- Freeze the assembled sandwiches for at least 1 hour to firm up.
- Garnish with chocolate chips, if desired, before freezing.
Notes
Wrap each sandwich in plastic wrap or store in an airtight container. Lasts up to 2 weeks in the freezer. Avoid refreezing melted sandwiches.
