Ingredients

  • 1 cup unsalted butter, softened Should be soft but not melted
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs Beat in one at a time
  • 2 teaspoons vanilla extract
Dry Ingredients
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Mix-ins
  • 1 cup crushed cookies (like Oreos) Your favorite kind works well
  • 1 cup chocolate chips Halal-certified preferred

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
  5. Gently fold in the crushed cookies and chocolate chips.
  6. Using a cookie scoop or tablespoon, drop mounds of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden. The center may look slightly underbaked.
  2. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to one week, or freeze in a container separated by parchment paper. Reheat in the microwave to enjoy warm.
